Top Chef “Mississippi Mud Bugs” Recap (1/1/14)

Tonight 's episode of "Top Chef" begins with the the chefs competing in a crawfish inspired  Quickfire Challenge. The chefs are tasked with preparing a version of Crawfish Étouffée. (A smothered shellfish dish traditionally served over rice”) The chef who wins this Quickfire wins Immunity from Elimination. Chef John Besh serves as guest judge.

Nina: Italian Style Étouffée with Pico Pasta
Carrie: Spanish Style Étouffée with Crawfish Broth & Chickpeas
Nicholas: Crawfish with Shrimp Mousse Stuffed in Napa Cabbage
Shirley: Singapore Chili Crab Étouffée with Crawfish Stock
Brian: Étouffée with Gochujang, Corn, Peppers, and Crab Meat
Carlos: Soup with Crawfish, Guajillos, Garlic, & Corn
Stephanie: Crawfish Bisque with Parisian Gnocchi

John Besh’s Favorite Dishes are by: Brian, Nina, and Shirley
John Besh’s Least Favorite dishes are by: Carrie, Nicholas, Stephanie and Carlos

Winner: Shirley-she wins Immunity from Elimination.


Elimination Challenge: Chefs must create a dish highlighting two different types of fresh seafood. The chefs will serve their dishes to 200 guests at a party thrown by The Louisiana Seafood Council.

Brian: Grilled Swordfish, Shrimp & Sweet Onion Puree
Nicholas: Oyster Leek Soup, Champagne Emulsion & Cured Amberjack
Carrie: Flounder Croquettes with Oyster Emulsion
Shirley: Tuna & Amberjack Ceviche with Aged Soy Sauce
Nina: Marinated Wahoo Tuna with Salsa Verde & Tomato Sauce
Carlos: Amberjack Ceviche with Rustic Peach & Shrimp Relish
Stephanie: Fried Louisiana Oysters with Tuna & Pickled Mushrooms

Judges’ Favorite dishes are by: Nina, Stephanie, and Brian
Winner: Stephanie

Judges’ Least Favorite dishes are by: Nicholas, Carrie, and Carlos

Carrie is sent home-the judges all agreed that she did not highlight the freshness of the seafood.

Next week the chefs cook French and Spanish cuisine.
