Top Chef "Finale" Recap (2/5/14)

After weeks of competition, Nina and Nick have made it to the "Top Chef" Finale.
The judges inform them that they are about to face their most difficult Elimination Challenge yet. 

Elimination Challenge: Each chef will take over a restaurant for the night and create a four course menu that showcases their cooking ability and creativity.

Both Nick and Nina get to select three sous chefs to help them plan and execute their menu.

Since Nick won the prior Elimination Challenge, he selects his sous chefs first.

He selects Jason, Louis, and Brian.
Nick names his restaurant Kris (after his wife).

First Course: Hamachi & Tuna with Green Apple Wasabi, Celery, & Maui-Meyer Lemon
Second Course: Sweet Shrimp Bisque, Scallop, & Daikon Noodles with Thai Basil
Third Course: Kombu Cured Duck Breast with Kabocha Squash, Hijiki, & Ginger
Fourth Course: Caramelized White Chocolate Panna Cotta with Almond Cocoa Crumble & Tropical Fruit

 
Nina selects Shirley, Stephanie, and Travis as her sous chefs.
She names her restaurant Canouan (in honor of her father).­

Nina’s dinner service includes 6 courses. In addition to the 4 required courses, she makes a Bread Course and an Intermezzo Course.

Bread Course: Breadfruit with Whipped Foie Gras Butter
First Course: Tuna & Escobar Tartar with Tomato Water & Jalapeno
Second Course: Roasted Goat Sugo with Orecchiette, Cherry Tomato Confit, & Goat Cheese
Third Course: Swordfish with Squash Puree, Braised Kale, & Smoked Onion Jus
Intermezzo: Compressed Dragon Fruit & Frozen Papaya Skewer
Fourth Course: Chocolate Zeppole with Macadamia Nuts & Passion Fruit Anglaise

 
After much deliberation and heated discussion, the judges select Nick as this season’s “Top Chef.” He wins $125,000 furnished by Healthy Choice.
