Chopped "Chocolate Competition" Recap (2/11/14)

On this episode of Chopped, the following four chefs: Phillip Frankland Lee, Chef & Owner in CA;­ Lucy Collins, Sous Chef in NYC; Pierre Coray, Private Chef & Caterer in CA; and Juerg “Fed” Federer, Chef & Instructor in NYC, face "all chocolate everything" mystery baskets.

In honor of Valentine's Day, the chefs must incorporate chocolate into all three of their dishes, Appetizer, Entrée, and Dessert. The dishes will be judged on creativity, taste, and presentation. The chef whose dish the judges like the least will be Chopped.

For the Appetizer Round, the chefs must use Mayan Chocolate Bars, Chocolate Martinis, Eggplant, and Pasta Sheets.

Fed makes Eggplant Cannelloni on a Spicy Chocolate Reduction

Lucy makes Eggplant Raviolo Infused with Mayan Chocolate

Pierre makes Ratatouille Stuffed Pasta with Mayan Chocolate Sauce

Phillip makes Eggplant Agnolotti with Chocolate Sauce

Chopped: Chef Pierre. The judges could not taste the chocolate martini in his dish.

 
 
In the Entrée Round, the mystery basket included Chocolate Cake Pops, White Chocolate Cocoa Mix, Quail, and Serrano Peppers.

Fed makes Quail with Raspberry Chutney and White Chocolate Sabayon

Phillip makes Crispy Fried Quail with Carrot Puree and Fried Cake Pop Salt

Lucy makes Pan-Seared Quail with White Chocolate Broccoli Puree
 
Chopped: Chef Lucy. The judges felt that her dish did not constitute an entrée portion.
 
 
 
The Dessert Round challenged the chefs with Cacao Paste, Chocolate Peanut Butter Cups, Baumkuchen (a kind of layered cake, popular in Europe and Japan), and Bing Cherries.
 
Fed bakes a German Baumkuchen and English Custard Tart
 
Phillip bakes a Cacao and Peanut Butter Sponge Cake
 
Chopped: Chef Fed. The judges felt his quail was not properly cooked in the entrée round and his custard was unevenly cooked in the dessert round.
 
 
 
Chopped Champion: Chef Phillip Frankland Lee. He wins $10,000.
