Chopped "Bacon Baskets" Recap (2/16/14)

Bacon! Bacon! Gotta Get That Bacon! On Sunday's episode of "Chopped," the following four chefs: Peter Kontomanolis, Sous Chef from NY; Blake Orchard, Sous Chef from CA; Roxanne Spruance, Executive Chef from NYC; and Noah Blom, Chef & Owner from CA, face mystery baskets filled with...Bacon.

The chefs must incorporate bacon into each of their three dishes (Appetizer, Entrée, and Dessert). Although, the chefs are allowed to use any additional pantry and fridge items, their dishes must highlight the pork product. The dishes will be judged on presentation, creativity, and taste. The chef whose dish the judges like the least will be Chopped.


The Appetizer Round challenged the chefs with Mangalista Bacon, Apple Chips, Horseradish Leaves, and Smoked Pork Chops.

Peter makes Goat Cheese, Bacon, and Horseradish Leaf Stuffed Pork Chops

Blake makes Frisee Lardon Salad with Braised Horseradish Leaves

Roxanne makes Pan-Seared Pork Chops with Bacon and Shallot Gastrique

Noah makes Braised Pork Chops with Apple Goat Cheese and Bacon Compote

Chopped: Chef Noah. The judges felt that it was impossible for them to judge his dish as an Appetizer, due to its large portion size.



In the Entrée Round, the mystery basket included Iberico Bacon, Pork Lion, Kimchi, and Dried Cherries.

Blake makes Pork Lion with Braised Kimchi and Sherry-Cherry Gastrique

Peter makes Pork Lion with Cherry-Dijon Glaze and Bacon-Kimchi Scrambled Egg

Roxanne makes Pan Seared Pork Lion with Cucumber Noodles and Cherry Black Bean Puree

Chopped: Chef Peter. The judges felt that his dish lacked cohesion.
 


For the Dessert Round, the chefs must use Applewood Smoked Bacon, Poached Pears, French Toast, and Cracklings.

Blake makes French Toast Hash with Poached Pears

Roxanne makes French Toast Ice Cream with Bacon Fat Streusel
 
Chopped: Chef Blake. Judges felt that his dessert was too sweet.
 
 

Chopped Champion: Chef Roxanne. She wins $10,000.
