Chef Wanted with Anne Burrell Recap (10/10/13)

This episode of Chef Wanted with Anne Burrell features four talented chefs, Chef Matthew Wool from Long Island, NY; Chef Jason Brumm from Boulder CO; Chef Charles D'Ablaing from Atlanta, GA; and Chef Jose Ballester from San Juan, PR. Each battling for the coveted spot of Executive Chef of Second Home Kitchen & Bar Restaurant in Cherokee, Colorado.

These chefs face two cooking tests and a potential dinner service where they must create a menu and serve a restaurant full of hungry patrons.

The First Cooking Test requires the chefs to Create a Theme Night along with one Appetizer and Entree that fits that theme. The chefs are allotted 60 minutes to complete this test.

Chef Jason's Theme: Flat Irons and Cast Irons
Appetizer & Entree: Flat Iron Tacos/ BBQ Flat Iron Steak

Chef Jose's Theme: Breakfast For Dinner
Appetizer & Entree: Crab Cake Benedict/ Steak and Eggs

Chef Matt's Theme: Rocky Mountain Mondays
Appetizer & Entree: Elk Tenderloin/ Pan Seared Trout

Chef Charles's Theme: State Fair
Appetizer & Entree: Rabbit Tacos/ Blackberry Pie


Eliminated: Chef Jose for failing to thoroughly cook his eggs.

The Second Cooking Test requires the chefs to butcher 1 of 3 parts of Lamb (Leg, Saddle or Rack of Lamb) to create a delicious lamb dish for potential restaurant patrons. Again each chef is allotted 60 minutes to complete this test.

Chef Matt's Dish: Lamb Porterhouse with Summer Vegetables

Chef Charles's Dish:  Roasted Lamb Lion with Merlot Jus

Chef Jason's Dish: Caul Fat wrapped Leg of Lamb with Cauliflower Puree

Eliminated: Chef Matt for overcooking his Lamb Porterhouse.


Chef Charles and Chef Jason head into dinner service.

Chef Jason creates a menu that features:
First Appetizer: Tri-Beet Colored Salad
Second Appetizer: Smoked Mozzarella Pizza
Third Appetizer: Seared Scallop with Grits
First Entree: Pan Roasted Chicken Breast
Second Entree: Lamb Two Ways

Chef Jason faced some challenges throughout his dinner service when he became bogged down with several tickets requesting his Lamb Entree and servers dropped several plates of food on their way to the dining room.

Chef Charles creates a menu that features:
First Appetizer: Smoked Salmon Pizza
Second Appetizer: Crispy Vegetable Polenta
First Entree: Trout Saltimbocca
Second Entree: Braised Veal Cheek

Chef Charles faced several challenges throughout his dinner service when he refused to change any of his dishes even after multiple dinner guests complained about the taste.


The New Executive Chef of Second Home Kitchen & Bar Restaurant is Chef Jason.
