Top Chef "Piggin Out" Recap (11/20/13)

This week on Top Chef, the chefs are tasked with making hot sauce for their Quickfire Challenge and butchering and cooking a whole pig for a New Orleans style boucherie for their Elimination Challenge.

Guest judge & New Orleans musical icon, Dr. John makes an appearance to decide which chef makes the best hot sauce. The chefs are given 45 minutes to complete the Quickfire Challenge.

Chef Brian made Jalapeno & Serrano Hot Sauce
Chef Shirley made a Hot Sauce with Ginger, Pineapple, Habanero & Serrano Chiles
Chef Carrie made a Trinidadian Pepper Sauce with Habanero
Chef Nicholas made a Sweet & Sour Hot Sauce with Smoked Apricots
Chef Louis made a Fresno Chili, Distilled Vinegar & Maple Syrup Hot Sauce
Chef Stephanie made a Peach Vinegar Habanero Hot Sauce
Chef Carlos made a Yucatan-Style Sauce with Mango & Passion Fruit
Chef Nina made a Caribbean Hot Sauce with Habaneros & Ginger
Chef Justin made a Pepper Hot Sauce with Fermented Anchovies

Dr. John's least favorite sauces were made by Chefs Nicholas, Carrie, and Nina
His favorite sauces were made by Chefs Brian, Carlos, and Justin.

Chef Brian wins the Quickfire Challenge & receives Immunity again.

The Elimination Challenge required the chefs to come together to create dishes using a whole pig. The chefs had 5 hrs to create a dish for 250 guests to be served at a boucherie. Each chef was responsible for one dish, but together they had to butcher & use the whole pig.

Chef Sara served a Pork Dim Sum with Crab & Shrimp Har Gow
Chef Justin made a Wood Roasted Pork Breast Taco with Pork Liver Salsa
Chef Carlos made Pozole Verde with Fried Chorizo Tacos
Chef Shirley made Jiaozi Dumpling with Pork, Grilled Kidney & Crispy Pork Fat Salad
Chef Louis served a Slow-Grilled Pork Leg with Spring Onions, Melted Corn & Popcorn
Chef Stephanie made Pork Brodo with Braised Pork Belly & Summer Vegetable Pickle
Chef Travis prepared a Cajun-Style Pork Ramen with Pork Bone Broth & Collard Greens
Chef Carrie made Crispy Trotters with Snap Peas
Chef Nicholas served Tete de Cochon with Summer Beans & Lemongrass Vinaigrette
Chef Nina made a Braised Pig's Head Ragu, Roasted Corn & Mustard Greens

The judges favorite dishes were prepared by Chef Shirley, Chef Nina and Chef Carlos
Winner: Chef Carlos

The judges least favorite dishes were prepared by Chef Louis, Chef Justin, and Chef Stephanie.
Chef Louis was sent home. The judges felt his dish had too many conflicting ingredients.
