Top Chef Boston: "Bravest & Finest" Recap (10/22/14)

For this week's Quick Fire Challenge, Padma informs the chefs that they will make an "Ultimate Surf & Turf Dish." At stake is a $5,000 cash prize.
 
Quick Fire Challenge: The chefs will have 45 minutes to make a Surf & Turf dish using ingredients from two tables: Land and Sea. 
 
If 1 lantern goes off, the chefs must select an ingredient from the Land table & if 2 lanterns go off, they must select an ingredient from the Sea table. 


Adam: Shoyu Marinated Flank Steak with Pretzel Dashi & Dried Crab Snack
 
Gregory: Grilled Lamb Chops & Bluefoot Mushroom Salad
 
Melissa: Fritto Miso with Mushrooms, Razor Clams, & Pollock
 
Joy: Marinated Buffalo Strip Steak, Veal Cutlet with Warm Slaw & Sea Salt
 
Stacy: Grilled Pork Chop, Fried Skate Cheeks & Arugula Salad
 
James: Sautéed Mussels with Boar Bacon Broth & Tosaka
 
Aaron: Smoked Bacon & Shiro Miso Dashi with Pork Meatballs
 
Mei: Pan Seared Haddock with Ramp Tomato Nage & Shaved Fennel Salad
 
Katsuji: Poached Sweetbreads, Quail Egg, Uni & Hot Pepper Jelly

For the Elimination Challenge: chefs must work in teams to create one cohesive dish for the men and women of Boston's police and fire departments.
 
They will have 2 hours to prep and cook before service. The chefs draw knives to decide their teams.

Blue Team: Filet Mignon, Parsnip Puree, & Pan-Seared Scallops
 
Gray Team: Grilled Pork Chop with Grilled Stone Fruit Salad & Walnuts
 
Yellow Team: Maple & Vanilla Wood Roasted Veal Chop with Vanilla Celery Root Puree
 
Green Team: Pan-Seared Chicken Breast with Bourbon Onion Jam & Corn Salad

Eliminated/Must pack her knives and go: Joy. The judges did not like her undercooked veal.
